Coldelite Compacta VariO is the combined machine for gelato shops that completes the entire artisan gelato production cycle in a single machine: the upper part houses the cooking cylinder for pasteurising the mixes, while the lower part houses the horizontal batch freezer cylinder.

The Vario system varies the speed and doses the refrigeration power according to the type and quantity of mix introduced, optimising production times and cutting electricity and water consumption by up to 30% compared with previous-generation batch freezers.

In addition, two-speed extraction, with speeds set from the 8 available and always manually controllable by the user, makes it easy to extract the gelato and add ripples.
