The freezing bowl turns and the mix moves towards its cold wall, where the water turns into ice crystals, giving body to the mass of liquid mix; then a special spatula, with a gentle, intermittent movement unique in the world, scrapes off and spreads the product onto a stainless steel surface, and as it freezes the product naturally incorporates air and takes on a soft consistency.
